Egg & Veggies Muffins

Getting in a nutritious breakfast is so vital to profound wellness! Egg Muffins are a nutritious grab and go solution when time is of the essence! Make a batch at the beginning of the week and enjoy!

 

Serves 6

  • 9 eggs
  • 1/2 cup milk or nut milk alternative
  • 2-3 cups of your favorite veggies - peppers, onions, leafy greens, mushrooms, tomatoes…
  • 1/2 cup organic breakfast sausage, ham or turkey
  • Coconut oil to grease muffin tins

Combine all ingredients in a large bowl, grease the muffin tins and bake at 350 degrees for 20-25 minutes. These freeze well so you can pull them out the night before for convenience.
